Fried catfish Recipe for Blue Catfish

Cook Time: 10 minutes
Ingredients: Cornmeal,salt,pepper,cayenne pepper, garlic, milk,hot sauce,parsley,flour,smoked paprika, lemon or lime juice
Directions: Soak the fillets in a cup of milk with a quarter cup of hot sauce and the juice of one lime or lemon, with a table spoon of chopped garlic. Mix together 1 cup of corn meal or polenta, with half a cup of flour a quarter cup of chopped parsley, 1 tbl spoon of salt, 1 of black pepper, 1 of cayenne pepper and 1 of smoked paprika. the longer the fish is marinated the more robust the flavor I usually soak it for 2 hours, drain the fillets and dredge them in the dry mixture fry them in what ever oil you like best until golden brown and crispy.
Other Notes: I enjoy fried catfish in tacos chopped up with fresh pico de gallo, or with some nice coleslaw and bisquits. the seaonings in the recipe can be substituted with a nice cajun rub added to the flour and corn meal but adding the spices yourslef affords you the option of making it as spicy as you want or the way you like it best
